I was first introduced to sunbutter when we went Paleo and boy am I glad we know about it! Sunbutter is just sunflower seeds in “butter” form. I prefer it much more than peanut butter. It has the same texture but is a little less sweet.
I was craving cookies this weekend but was also in a super lazy mood, what a combination! Then I thought up this recipe and quickly got to work.
The recipe has only three ingredients, and the cookies are very similar to a peanut butter cookie, right down the the crosshatch pattern on them! I made these a little less sweet to help with my sugar intake but feel free to add more if you want.
Sunbutter is becoming very popular in grocery stores, and I have yet to find a store that does not carry it!

Serves: 1-2 dozen
These are the perfect snack for someone with allergies or if you want a slightly less sweet treat that is packed with protein!
- 1 cup sunbutter
- ¾ cup coconut sugar
- 1 egg
- Salt for sprinkling on top
- Preheat oven to 350 degrees.
- Place sunbutter, sugar and egg in a bowl and blend until fully mixed together.
- Scoop onto a parchment paper lined cookie sheet and flatten out slightly with a fork, you can do a crosshatch pattern if you like. I make smaller cookies so they last longer in our house!
- Sprinkle with salt.
- Cook for 8-10 minutes and cool before eating.
